Leave for an hour or longer if you like. If they’re frozen, go away them for a quantity of hours. Drain them, rinse them with cold water and place them in a pan. Pour enought inventory over them to cover them by about half cm (1/4″), and add the lemon and vinegar. Bring slowly to the boil, and simmer gently till they lose their uncooked pinkish white look and switch opaque. This takes a couple of minutes with lamb’s sweetbreads; veal sweetbreads, being much larger, can take 20 minutes. Pour off the cooking liquor, which can be used in soups and sauces .
